Gajar ka halwa/Carrot pudding.
Gajar ka halwa, is a north Indian delicacy mostly prepared in winters. It’s one of those desserts which can both be served cold or warm.
Loaded with vitamins, heathy fats, it’s one of the most relished delicacies of India.
It is prepared is various ways, some prefer the instant pressure cooker version.
Some add mawa/condensed milk.
But the traditional way,also the way I personally prefer is letting the carrot cook in milk as the milk thickens, it is a time taking process. But trust me nothing can beat the taste.
Grate carrots, I prefer the food processor for this as it saves a lot of time.
Heat milk till it boils, let it simmer for 10 minutes, then add the grated carrots.

Let it simmer and cook for good 10 minutes stir occasionally.
Let this thicken.

Keep stirring occasionally, after it gets nice and thick add sugar.
Let the sugar dissolve, then add cardamom.

Till it has this consistently, now add ghee, mix. Halwa is done

Ingredients:
- Carrots- 1kg.
- Milk-1 lit full cream.
- Sugar- 250 gms.
- Ghee- 2 tbsp.
- Cardamom- 2/3 pods crushed.
Directions:
- Boil milk and simmer for 10 minutes.
- Add grated carrots and cook stirring occasionally for 20-25 minutes.
- Once the mixture thickens stir continuously till it thickens further.
- Add sugar mix till it dissolve
- Add crushed cardamom.
- Top with almonds, nuts.
- Serve warm or cold.
