Bhindi aka okra/ladyfinger.
It is one of a favorites in my house. There are many ways to make the sabzi, this is the North Indian style.
I personally prefer mustard oil for dry sabzi, but you can use any oil.
Ingredients:
- Bhindi-250 gms.
- Turmeric-1/2 tsp.
- Red chili powder 1tsp.
- Coriander powder- 1tbsp
- Amchoor-1/2 tsp.
- Garlic-2-3 cloves crushed.
- Green chilies-1-2.
Instructions:
- Wash the bhindi and dry on a kitchen towel to absorb moisture to make sure it is not slimy when cut.
- Cut it into half an inch width pieces.
- Heat oil in a pan, then add oil, once heated put cumin seeds and asafoetida(hung)
- Then add green chilies and bhindi. Cover and let it cook for 2-3 minutes
- Then add all masalas and again cover and cook.
- Cover and let it cook for another 5 minutes.
- Then add in the amchoor and garlic, cook uncovered
- Cook till done. Serve hot with roti or paratha.
