Bhindi aka okra/ladyfinger.

It is one of a favorites in my house. There are many ways to make the sabzi, this is the North Indian style.

I personally prefer mustard oil for dry sabzi, but you can use any oil.

Ingredients:
  • Bhindi-250 gms.
  • Turmeric-1/2 tsp.
  • Red chili powder 1tsp.
  • Coriander powder- 1tbsp
  • Amchoor-1/2 tsp.
  • Garlic-2-3 cloves crushed.
  • Green chilies-1-2.
Instructions:
  • Wash the bhindi and dry on a kitchen towel to absorb moisture to make sure it is not slimy when cut.
  • Cut it into half an inch width pieces.
  • Heat oil in a pan, then add oil, once heated put cumin seeds and asafoetida(hung)
  • Then add green chilies and bhindi. Cover and let it cook for 2-3 minutes
  • Then add all masalas and again cover and cook. 
  • Cover and let it cook for another 5 minutes.
  • Then add in the amchoor and garlic, cook uncovered
  • Cook till done. Serve hot with roti or paratha.
