PANEER(cottage cheese) RICE CUCUMBER ROLL
RECIPE:
For Paneer (cottage cheese)Curd Rice:
- 1/2 cup rice (soak for 30 mins)
- 1cup water
- 1tsp salt
- 1/3 cup finely chopped onion
- 1tbsp grated ginger
- 1/3 cup chopped coriander leaves
- 5-6 curry leaves
- 1cup hung curd
- 1/3 cup Paneer
- Salt to taste.
In a mixing bowl, add cooked rice, hung curd, ginger paste, coriander leaves, green chili, chop curry leaves, onion ,paneer and salt to taste. Mix all very nicely. The rice mixture should be thick otherwise it wont roll. Keep it aside.
For tomato chutney cream cheese
- 2 Tomatoes, peeled
- 2 Madras Chillis
- 1 tbsp Mustard Oil
- ½ tsp Rai – Mustard Seeds
- 1 & ½ tsp Pickle masala
- ½ tsp Kashmiri Chili Powder
- ½ tsp Hing
- Salt to taste
- 2 tbsp Tomato Puree
- 1 tbsp Tamarind pulp
- 8-10Curry Leaves
- 60 Gram cream cheese
Deseed the tomatoes and chop finely.
Heat mustard oil in a sauté pan.
Once the oil heats up, add mustard seeds.
Once the seeds pop, add hing, Madras chilis and Kashmiri chili powder.
Add the curry leaves last. Once they are fragrant, add chopped tomato and sauté.
Add tomato puree, pickle spice blend and cook.
Add ¼ cup water and cook until tomatoes soften.
Add tamarind pulp, reduce the same till it reaches a thick consistency and then taste the chutney. Adjust the salt level as required.
Cool down and blend the same in a mixer with cream cheese.
Strain and fill into a piping bag. Keep chilled for assembly.
- For cucumber roll
- 1 cucumber
- 1/2 cup tomato chutney
- Paneer curd Rice
- Wash the cucumbers and cut the ends Thinly slice lengthwise with vegetable peeler. Cut roughly 5 slices and then slice the opposite side and discard the rest of the cucumber. Their should not be any seeds in the slices. Do the same with all the cucumbers.
Assembly of the Dish:
Prepare this cucumber sheet just before the assembly is ready to begin. Arrange the cucumbers, slightly overlapping each other, on the cutting board until the sheet is 6″long. Trim the ends to form a straight line. Transfer the sheet to a bamboo mat. Spoon the Paneer curd rice filling along the bottom of the cucumber sheet, leaving space from the bottom. Compact the filling into a log Lift the mat and gently roll the cucumber sheet over the rice filling, pressing gently. Continue to roll with the help of the sushi mat, pressing the roll to keep it tight. Once the sheet has been completely rolled around the filling, place on the plate and pipe a straight lengthwise stripe of tomato chutney cream cheese along the centre on the top of the roll. Top with the dehydrated tomato skins, Parmesan papad/crisp and mint leaves.
